a kid-friendly and easy baked ziti recipe

By the end of the day lately, I’ve been too tired to make dinner. So I prepped some recipes for my husband to make instead! He made this easy baked ziti recipe last week, and the whole house raged about it. Let’s not even talk about how upset we were when we found out that hubby didn’t put the leftovers in the fridge, so they went bad! We forgive him, though 😉

You’ll need a pot to cook the pasta and a baking dish to throw it all in the oven. What I love about this recipe is that it doesn’t include meat. This makes it perfect for those days where you forget to take meat out to defrost for dinner! Seriously, we all know we have those days more often than we care to admit. It’s ok, I got you!

baked ziti with spinach recipe

Ingredients:

  • 1 lb ziti pasta
  • 15 oz ricotta cheese
  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 1 cup fresh spinach, chopped
  • 2 garlic cloves, minced
  • 28 oz crushed tomatoes
  • 1 tsp oregano
  • Salt & pepper

instructions:

  1. Preheat oven to 375°F.
  2. Cook pasta until al dente; drain.
  3. Sauté garlic in olive oil, add tomatoes, oregano, salt & pepper. Simmer 10 mins.
  4. Mix ricotta, spinach, Parmesan, salt & pepper in a bowl.
  5. Combine pasta with sauce and ricotta mixture.
  6. Transfer to baking dish, top with mozzarella.
  7. Bake 20–25 mins until bubbly and golden.
